Avocado and lime mousse

Sea bass served in an asparagus-lime emulsion, with cornmeal mousse and broccolini.
II Main Course
Beef cheeks confit in red wine, with truffle purée, beetroot chips, and jasmine-perfumed demi-glace.
Dessert
Advocaat liqueur mousse, coconut sponge cake, raspberry jelly, and dark chocolate ganache.
